Leek-Potato Soup

Very easy to make and very delicious…  I don’t think potatoes have much flavor so I added more leeks than potato, hence the name.

Here is a bowl with a bit of sour cream.   This was another craving I had to satisfy.

Cheddar Cheese Omelet with Leeks

I had some extra leeks from the potato-leek soup I made and put these delicious things together, along with some baby spinach.  I also added a little bit of low-fat sour cream which makes the eggs smooth and creamy.

I don’t think I’ve ever had quality cheddar because I can’t seem to compare its flavor and texture to Kraft’s American yellow cheese.  If anyone has a recommendation, please let me know.
