Wild Rice Salad with Dried Cranberries & Cashews

I have been spending $8.99 a pound for the prepared food bar at Whole Foods on a salad similar to this one. Well, no more (unless I’m caught nearby with stomach grumbles)!

I ate a wild rice salad at a work pot luck years ago but still remember it for its texture. It’s amazing what our senses do for our memories… Difficult to think how we could live without any or even one.

This rice was easy to cook and mastering good “grainy”, as opposed to “mushy” rice was something I struggled with and finally accomplished successfully although it’s still not perfect every time. I simply followed the package instructions.

Here’s what I added to the cooked rice:
Dried cranberries, raisins, unsalted cashews, scallions, and almond slices. You can omit a nut or two. The dressing: rice vinegar, canola oil, freshly squeezed orange & lemon juice, and honey.

Just look at all those lumpy, crumbly, fruity, nutty, yum yums…
