What’s Green & Red All Over?

Bell Pepper Muffins

Savory muffins are a sensory experience!

The unexpected look and taste of the bell peppers and onion with a little added butter… (Butter is good on EVERYTHING!! This, I learned from my father who even slathered Entennman’s cinnammon-glazed coffee cake in the stuff!)

I followed the recipe from, Muffins: Sweet & Savory Comfort Food. I thought the batter was a bit too dry but the muffins were moist when they came out of the oven and on the following day.

Being that I love spice and intense flavors, I have to say that these muffins could have been more flavorful so the next muffin I plan to make will include, red pepper flakes, creamed corn, AND cheddar cheese (coming soon).

Here’s the recipe:

Green & Red Bell Pepper Muffins
½ C butter
1/3 C scallion, 1/3 C red bell pepper, ¼ C green bell pepper
2/3 C sour cream
2 eggs
Dry ingredients: 1 ½ C flour, 2 T sugar, 2 t baking powder, ¾ t salt, ½ t baking soda, ½ t dried basil, ¼ t dried tarragon.
Process: Cook the butter, peppers, and scallions till soft. Let cool. Mix all dry ingredients in a separate bowl. Mix sour cream, egg, and cooled pepper mixture. Add the wet & dry together just to combine. Add to muffin cups and bake at 400 degrees about 20 minutes. Makes about 10.
