Roasted Vegetables & Peppers
Healthy, yes. Sweet, yes. Savory, yes. Versatile, yes.
Just buy a bunch of the following: red and green bell peppers (or any of the other gorgeous colors), squash or zucchini, Spanish onions, and button mushrooms.
Cut them up, throw them into a big bowl, add some olive oil, salt and pepper and roast on a shallow tray in the oven for about 30 minutes.
Flavor, flavor, and did I mention, flavor…
This is not your ordinary grilled cheese sandwich.
