Weathering The Storm: Be Blue

Blueberry Scones

Yes, the weather is depressing but the anti-oxidants in the blueberry can make you feel good! And so can creating these deliciously flaky blueberry bites of yummy-ness!

I know, a lot of description for scones but they deserve every word!
I’ve made them twice already and they got even better the second time.

I adapted the recipe from one I found on a fellow bloggers site after searching FoodBuz. I added pine nuts to balance the tart of the blueberry which really works.

The sensation of just-baked scones tingles the senses, doesn’t it???

Here’s the recipe.

Blueberry Scones (From Smells Like Home blog)
1 stick unsalted butter, frozen
1 C blueberries (put in freezer for a few minutes to harden)
¼ C pine nuts
¼ C milk
1 small or medium egg
½ C sour cream
2 C flour
½ C sugar (set 1 T aside for topping scones)
2 t baking powder
¼ t baking soda
¼ t salt
1 t lemon zest
2 T melted butter (to brush on top)

Mix milk, sour cream, and egg then refrigerate. Combine flour, sugar, baking powder, baking soda, salt, and lemon zest. Grate the frozen butter into the flour mixture then add the milk mixture and roll out onto a floured surface. Knead 6-8 times, roll and shape into a 12” square. Add blueberries and pine nuts and roll into a log shape. Slice into 3”x6” pieces (can be smaller if that is your preference but I personally like big scones) and lay slices onto a parchment lined baking pan. Brush with melted butter and sprinkle with sugar. Bake at 350 degrees for 20-25 minutes. Makes about 12 scones.
