Chicken Salad (Using Leftover Rotisserie Chicken)

The $4.99 chickens were on at Associated for two weeks in a row, great, right? Well, the one I bought was a bit overcooked. And what do you do with an overcooked chicken which, for the most part, has lost most of its flavor? You dress it!

I created a dressing that included fresh tomoatoes and onions which I processed…

then combined with mayo, wasabi, lite ranch dressing, and sour cream.

All you need is one teaspoon or less of each since these are highly flavored (as well as highly calorie-d) condiments.

Remove all the chicken from the bone. Dice it up or shred it which should yield about a cup and half to two cups of chicken. Then dress!

Serve with a salad or have on sliced bread.

Simple, flavorful, and economical.
