Artichokes On My Back

Artichoke & Olive Tuna Salad

Just discovered this recipe since I’ve been O.D.’ing on artichokes lately, it really sounded delicious.

I still have yet to tackle cooking a “fresh” whole artichoke and came close to attempting when they were on sale last week.

Yes, it really is a nice new twist on tuna salad. Easy, and of course, loaded with flavor!

I adapted the recipe from one I found at EatingWell.com.

Ingredients

2 cans of tuna
½ package of Birds Eye artichoke hearts (chopped)
½ onion, 1 garlic clove
1 t canola
½ C pitted olives
¼ C mayonnaise
½ t dried oregano

Process: sauté the onion and garlic in the canola oil. Add the artichoke hearts. Chop the olives and add all remaining ingredients to tuna.
This is very satisfying and healthy when served on a bed of romaine lettuce. You may also care to add some avocado and tomato.
