Even Apples Need Hugs

Apple Crostata

Saw Giada de Laurentis make something like this and it looked much simpler to make than an entire apple pie.  Did I mention it looked simple to make?

I used Ina Garten’s recipe for Apple Crostata.

Recipe for the dough:

1 C flour, 2 T sugar, 1/4 t salt, 1 stick cold butter, 2 T ice water

I freeze the unsalted butter for about 30 minutes then use a cheese grater to add it in with the other ingredients.  Super easy!

When the mixture is crumbly, I roll it by hand on a clean floured surface and knead it.  Quite fun!

I form it into a disc, wrap it in plastic then refrigerate it until I complete the filling mixture.

I then roll out the dough into a circular shape (about 11″ diameter) and place it on a baking sheet with parchment paper.

Recipe for the filling:

3 apples (McIntosh, Empire or Macoun)

1/4 t orange zest

1/4 C flour

1/4 C sugar

1/4 t salt, 1/4 t cinnamon, 1/8 t allspice

4 T butter

Wash, peel and slice the apples.  Combine the remaining ingredients then simply toss this mixture onto the sliced apples.

Pour the filling into the center of the 11″ dough leaving about a two inch border.  Then pinch the dough together with your fingers to “hug” the apple filling.

Bake at 400 degrees F for about 30 minutes.  Done!

Add vanilla (or whatever flavor gets you going) ice cream (or frozen yogurt).
