Sautéed Vegetables

Yes, the nice long days of summer are behind us and reality has set in. I’m still resisting feeling a slight shiver in my open-toe shoes and sweater as I bolt across the street to the grocery store.

Can the warm weather really be over for the next five to six months? Am I really going to have to wear socks on my feet and slacks past my ankle?

While my fellow food-bloggers are blogging about autumn vegetables and pumpkin this and pumpkin that, I’d rather be blogging about my current craving and the strawberry tarts or lemon cookies I’ve been making to satisfy those cravings. But I relent and follow suit.

This tasty vegetable sauté featuring that veggie fall favorite – broccoli – is relevant and quick cooking (cooks in less than 15 minutes and with help, even less time than that)! So it leaves plenty of time to take a long meandering walk before the sun sets. It’s perfect with rice or pasta or perhaps with a rotisserie chicken cooked for you by your favorite chefs at your local supermarket.

Savor these early autumn days, while the days are still somewhat long because turkey, roasts and every decadent holiday treat you can think of will be on the menu before you know it!

Breathtaking Broccoli

Sautéed Vegetables with Garlic and Herbs

Yield=3-4 servings
3 C organic broccoli (cut in bite-sized pieces)
2 T olive oil
½ large white onion (finely chopped)
5 cloves of garlic
1 red pepper (julienne sliced)
2 organic carrots (peeled and julienne sliced)
½ t each of fresh oregano and thyme
dash of salt
dash of pepper
red pepper flakes (optional)

Heat olive oil in shallow pan and cook onions until softened. Add the salt which will absorb into the onion and enhance its flavor. Add garlic and cook for about 30 seconds. Now add all the remaining vegetables and cook covered for about 10 minutes, stirring often. Add your herbs and red pepper flakes and cook for another 3 minutes then remove from heat and serve.
